Grilled Chicken Bruschetta

Grilled Chicken Bruschetta

ingredients:
1/2 cup balsamic vinaigrette dressing, divided
1/4 tomato paste, divided
4 small boneless chicken breast
1 can (14.5oz) diced tomatoes
1/4 cup sliced green onions (scallions)
2 tablespoons chopped fresh basil
1 clove of garlic diced
Italian bread or French bread

Directions:
Mix 1/4 cup of dressing with 2 tablespoons of tomato paste. Pour over chicken in a small dish. Refrigerate for 30 minutes.

combine drained diced tomatoes, remaining dressing, remaining paste, onions, basil and garlic. Mix and refrigerate until needed.

preheat grill or oven or broiler. Cook Chicken breast. Grill thick cut bread 2 minutes on each side. To serve set chicken on top of toasted bread and top off with tomato mixture. Enjoy.

  • I don't know how I missed this video & recipe, but I did. This looks delicious! I'll have to give this a try real soon. I've done recipes off of cans before and they turned out really good! Sometimes they're worth a try. I do believe I saw you review the taco bowl. I've got them and I love them! They do come out perfect! TFS Jack! ๐Ÿ˜€

  • ok just finished watching this one bet it tastes amazing but i would like to see you redo this with tenderising (pounding) the breast to about 1cm then marinade and grill or fast oven cook would not take long at all. The bigger surface area would give a much bigger marinade taste and none of the bland chickenย  breast taste you can get in the middle if it a full breast.

  • I like to use a garlic press. You put the cloves in, smash it, scrape into dish, open and pick out skin. Super easy and it's grated. :}

  • doesnt look bad but the bread…. but i think some fresh and crispy chiabatta would be better^^

  • I like fresh tomato concasser on my bruschetta. Mix it right in with everything else before it even touches the bread. That nice fresh-cut tomato feel goes incredibly well with a nice garlic-rubbed rosemary focaccia crostini.

    I need some of this now.
