Sven Elverfeld, three Michelin star chef from restaurant Aqua in Wolfsburg Germany, talks about his food style and philosophy and creates two dishes from his current menu.

The first dish cooked by Sven is a Gillardeau oysters with raw beef and jellied essence, pine nuts, „Nonpareilles“ capers and anchovy-onion cream. This is followed by char-grill belly of pork, sauerkraut, apple, fried potatoes foam and balsamic emulsion; this dish takes classical German combinations but with an added modern twist by Sven and his team.

  • They're cool but you can't get your hunger away with that kind of portions 😀 Buy a big stack of good quality steak, go home, make a salad, cook the beef, maybe have a glass or two of red wine and eat it: nothing beats that and you get your stomache full

  • This is the realm of food that is a feast for the eyes as well as the mouth. I mean this is just straight up art right here. I wouldn't pay the extravagant amount charged for the meager amount of food but I can certainly see why those who can afford to, do.

  • this is not serius. they forgot what is the reason for cooking. "to eat/enjoy the food and not be hungry after". serving a slice of bacon or a plate with 3 bites of foam is not cooking for real people. I only respect that in case he is sampling his food yes great job there. but the portion is not even for a baby to eat.
