Traeger Grills presents 321 Ribs

The 3-2-1 method of barbecuing ribs—3 hours of smoke, 2 hours wrapped tightly in foil, and 1 hour sauced—has become very popular among competition barbecuers and home cooks alike, especially those who prefer their ribs “fall-off-the-bone” tender. Adjust the cooking time if you like your ribs with more chew.

  • Just followed recipe – I think I didn't wrap tight enough for 2 hour step – when I unwrapped, all the juice was cooked out – then after the last step, the bbq sauce on grill, the bones lifted off the meat ok, but the meat wasn't tender – sort of dried out

  • I always wonder where all these outdoor grilling videos are made where they don't have to deal with any flies or mosquitoes. Ever notice, there's never one insect flying around to get on your meat or rubs. They're definitely not filming in Houston, TX.

  • Just picked up mine from costco for $999 great deal.   The traeger is engineered so finely that all screws and holes and parts fit perfectly during assembly.   USA built obviously!  The ribs turned out great and will experiment with more dry rub combinations but I love this grill.  I too got rid of my all stainless grill.  Im done with charcoal and gas.   Wood pellets is the way to go.

  • You need to remove the membrane first. Use a strong tablespoon to start working it off from one side and then peel it off. All the pros do it this way. I've has a Traeger for 5 years and believe me your ribs will come out a lot better. I've used a lot of variations on the method shown but I like to dry rub the ribs with my own concoction for the first step. Experiment! Brown sugar, cumin, dry mustard,( i like Colmans) garlic powder, onion powder, chili powder, cinnamon, black pepper, cayenne all can be used in any combination. And go easy on the salt because it dries out the meat.

  • Those of you commenting on how the meat should "fall off the bone", this is actually a bad thing, and means your meat has been overcooked.  Pretty much any competition BBQ pro is going to tell you the same thing.  Cooking to the point of falling off the bone will rob the meat of most of the flavor.  Use a meat thermometer and the twist technique to truly know when your ribs are done.

  • They don't teach you to remove the membrane. Doing that adds a lot of extra flavor and tenderness.

  • I haven't tried this method yet, but here is what I do and It falls off the bone:
    – put dry run on the meat and cook at 225 for 2 hours meat side up
    – Mist with apple sauce after the 2 hours is up
    – brush your favorite barbeque sauce on and cook at 225 for 10-15 minutes
    – remove from grill mist with apple sauce and brush more of your favorite BBQ sauce on.  Mist foil with apple sauce and wrap in foil and cook for 2 more hours on 225.

    Delicious

  • Is the meat falling off the bone? I have done ribs on my Traeger many times, but never for so short a cooking time. This recipe looks delicious.
