Whip out your cast iron pan and put it in the grill on medium-ish indirect heat. If you don’t have a cast-iron pan, an aluminum pan will work. Let sit until the cheese has melted. Pull it off the grill and let it cool for a few minutes.

PRO TIP: You can grill the filled tortillas quickly with a little pressure on it. It will harden the tortilla to close it and leave those pretty grill marks.
