  • With alldue respect, a steak is cooked on a real grill ( wood fired). Those steaks are ruined. Only a Yankee cooks a steak on a cast iron wannabe grill.

  • Chef john, i am a little shocked at the grade of steak. I have quite a bit of experience in steak grading, there is no marbling which has to be select grade, the lowest in the supermarket which will have no flavor w/o marinating overnight. Rub won't save it. Working top to bottom you know #1 prime #2choice #3 select, there are 8 grades, the rest are for pet food or canning. #4 is the one that guys in vans with a deep freezer in the back go to areas door to door trying to sell it. Folks , do not buy it, the drop off in grade #3 to #4 is huge, the steak is terrible, tough, no flavor. You won't find it in your grocer's. Trust me ! Also grass fed, grain fed,etc… all get graded by usda specs

  • Important to know if the grass fed cattle are grass finished as well. Often times they are grain fed to fatten them up just before being sold.

  • Making ribeye tonight. Looked through many videos but I'm stopping here ! Not too much fuss to disguise the flavor of such a beautiful piece of meat .

  • Ribeyes are particularly good with blue cheese and some butter blended. The other thought is that an instant read thermometer is a far better way to cook than doing it by how much time.

  • I love this channel, but after visiting California I realized that none of you know what a good steak should taste like or how to cook one. Please come to the midwest where we live with and raise these animals. It is so much better. Grass fed beef is lacking in the quality that makes a steak good… intramuscular fat. Intramuscular fat is what qualifies a steak as prime and what wagyu beef is specifically raised for. Lean beef is as bad as lean pork dry, tougher, and lacking in depth of flavor.
