  • my peroneal favourite cut. like a slice of prime rib. I <3 filet but this is more flavourful i.m.o., 'cuz of the fat content.

Thank you! Oh, I also cut mine up on a cutting board like you did and allowed people to grab the pieces they wanted…they even looked more appetizing on the cutting board with the onions….Awesome!
