    Pastrami and Corned beef is just not for me…
    I never thought about it before, but I guess I don't like pickled meats.

    That crust was incredible Jaxx! These cook well on the PBC too. Wish I had a slicer like you. Man…when is the fricken cook book coming out bud?!?!?!?!

    Heck yeah Jaxx, that looks fantastic! I’m doing one this weekend but the lazy way, I got corned beef that I’ll soak to remove some of the premade brine and then smoke it with a rub, yours sounds good. You scored on the WSM, one of my favorite cookers, get a Cajun bandit door to replace that cruddy stock door. Have a great weekend brother and keep on cookin!

    Dang bro that was success for sure. I have not made it home yet. But use to eat all the time back in the day when I was in the Navy. Very nice bark as well.
