Steak Roulade | Asparagus Cauliflower Puree | Keto Grilling Recipe



Keto Steak. Steak Roulade is IMPRESSIVE. This Keto recipe we use a sous vide to cook our asparagus and we grill our sear the steak. Yum.

Steak Roulade:

The amount depends on how many you make:

Thin flat steak
Skinny asparagus
Feta cheese
Olive Oil
Herbs (fresh)
Garlic
Salt & Pepper

1) In a zip top bag place the asparagus, oil, herbs and garlic. Seal the bag with no air using the water displacement method. (dip the bag in a bowl of water and seal when the air is pushed out)

2) sous vide for 12 minutes at 182F

3) salt one side of the steak. this side will face out of the roll. once the asparagus has cooked place 4-6 pieces on each steak. Top with feta. (reserve some asparagus and it’s cooking liquid for the puree)

4) chop a head of cauliflower and place into a pot. Dump remaining asparagus and liquid in. Cook until tender. Blend until smooth.

5) Roll the steak into roulades. Hold together with toothpicks. Grill on high until crispy. Rest with butter. Slice and serve.
