Here is the recipe:
1 Cup Brown Sugar
1 TBSP Black Pepper
1/2 Cup Coarse Salt
1-1/2 to 2 Lbs. Salmon (Preferably Wild Caught)
PREPARATION
Place the Salmon in a large resealable bag. Mix dry ingredients and apply to salmon. Refrigerate for 2-4 hours. Rinse the cure and dry with paper towels. Set Traeger to smoke with lid open until fire is established. Smoke salmon for 30 minutes (Skin-Side down). Increase to 225°F-230°F. Cook salmon for 45 min-1 hour. Refrigerate until serving time.

  • the davy crocket from green mountain grill is a much better buy. I went a while and did a lot of looking before i mad that choice. but with a already dig control, mush more coking space, is able to go from 150 to almost 600 degrees. And can be plugged into any car. I believe it was the better choice. good video though

  • Hell yeah, Jack. Props to the boy for giving something he didn't think he'd enjoy a shot. I have a handful of cowardice friends who are scared of fish and/or vegetables. I want to stuff a box of tampons down their throats and kick them in the back of the head half the time we have BBQ's.

  • @Cooking With Jack Show 1tbsp cider vinegar, 3tbsp worcestershire sauce, 1½tbsp soy sauce (Kikkoman), onion, garlic cloves, 1tsp salt, 1tsp pepper and ½tbsp dry basil…very good with "any" seafood. Can use it on any meat as marinade…

  • Hey Jack, where did you get the salmon? We live in Portland, TN and we haven't seen any salmon that looks that good.
