  • j.b…..love your vids, but i do have a bitch to parlay. when you are in the kitchen your fan is so loud that i cant wear my headfones. (wife usually sleepin) i watch your vids latenite. and when your out on your patio, that blasted fountian is so loud i cant concintrate…even after 9 to 12 "wobble pops" it drives me nuts!…lol but you dod do a mitey fine job my friend..so thank you for the fun watchin you give me….just be aware that the background noise can be heard by us watching too….cheers….tom

  • Great vid, full of facts that only pros know. You can come over to my house and cook anytime you want. May I make a suggestion though: if you want the best smoker, dig yourself a pit somewhere in your yard, get a 50 gallon metal drum modified so that it has multiple rack holders, fill the pit with hot wood coals, put your soaked wood on top of those coals, and cover the top of your drum with a homemade lid you made out of a flat piece of sheet metal. The sheet metal should have holes it in you can cover with bricks to adjust temperature and airflow. This is the best, smokiest, smoker/grill ever, and you won't regret it. Most smokers/grills don't allow the smoke to come straight up cause they have holes on a round lid. This invention fixes that, plus having a pit dug for your smoker's fuel keeps the heat further away from the meat you're cooking so that you're getting more smoke.

  • JB I am super confused about the water pan in the smoker! I have watched a lot of your videos and you discourage the use of water in the pan but I had watched one video and I do not remember which one it was. In it you corrected yourself you received a text message and said the water helps keep it hotter! What should I do line the water pan with foil and get the briquettes or use water. It is almost time and This is my first year smoking want to do it right "Boy"!! No non Union cooking on my end btw I have the 22" Weber a Smokey Mountain!

  • Well said JB! A lot of people fail and give up on smokers  then sell them (using the excuse that they don't have the time).Its usually because they don't understand how the work!

  • Can you share some input on meat probes, dual probes….. which are good ones. there so many out here, so many mixed reviews. Also if I season my WSM should I still use the water pan for a few cooks ? I plan on using play sand oppose to the water.

  • Hey JB, love your videos! I must have watched this one a half a dozen times and i still pick up something new each time i watch it. Everyone says to leave the top vents open, what would happen if you closed it halfway? Over smoked meat or? Thank ya sir

  • Mr. J.B. should i put ceramic charcoal in my water bowl in place of water too maintain my smoking temperature! I have a cheap ECB smoker! I can't afford the expensive ones… I also bought a vertical charcoal smoker, got it really cheap and wanted too know if i can do the same with this one too!!
