I love making wild game sausage and this juniper and sausage recipe is excellent. I have never used juniper berries before making sausage, but I tell you It goes great with this venison sausage recipe. Knowing some charcuterie skills does help when you are trying to make homemade sausage. I use these skills when processing my deer and wild hog. But you do not have to be a professional to start enjoying making great sausage at home. Also you do not have to use wild game, you can go the the store and pick up some pork, beef, or poulty and start learning how to make homemade sausage.
