Here is how to pick a ripe mango.

1. Look for mangoes with smooth skin (no wrinkles).

2. When squeezed it should “give” like an avocado.

3. It should have a sweet smell at the stem end.

4. Red color seems to be more sweet than non red mangoes. What is your experience?

5. I look for “sugar spots”. The more the better.

My favorite way to dice or make spears out of a mango is to peel it first with a sharp paring knife.

A potato peelers doesn’t work well for me at it tends to tear a nice ripe mango.

Once it’s peeled I cut a small piece off the stem end so it can stand up and is pretty stable.

I cut off the cheek following the widest part of the mango. I demo in the video. Remember the seed is fairly flat and oval shaped.

Then I cut or dice the cheeks to what ever size I need. Small cubes for salsa and spears for appetizers and grilling on the barbeque.

That’s pretty much it. I love using fresh mango on ice cream or yogurt, in a smoothie along with salsas and wrapped with asparagus and prosciutto.

It’s a great tropical tasting fruit with plenty of vitamin C.

Enjoy!

  • "slice your cheeks off"… uhm, I'd rather not. I'm not into self-mutilation. 😉

Anyway, I usually do it your way. First peeling than liberating the flesh from the seed.
