I modified this recipe by adding a tiny plash of red wine and a bit of feta into the mix. also used chorizo instead of hot italian

i did this as well awhile ago when I went paleo. the shrink factor was indeed surprising, it was almost 50%, so keep that in mind.

It would be easy if he use long bamboo skewer to seal the squid as it can seal multiple squid at the same time hence flipping the squid is easier

How is the calamari not overcooked
Has anyone made this dish the way he suggests? I was wondering if the squid is over cooked? 10 to 12 minutes. I've always heard don't cook squid more than 4 or 5 minutes, some even say 2 minutes. If so maybe cooking the stuffing halfway or all the way first then stuff the quid might prevent any over cooked squid? Also wondering if that process would lose a lot of flavor?

As the squid cooks the opening of the tube curls outward, enabling stuffing to fall out. To be sure, the toothpick helps to prevent this. However when I make stuffed squid I turn the tubes inside out prior to stuffing. This way the opening curls inward as it cooks effectively closing the hole. So I save time by avoiding the toothpick step and I get some overstuffing insurance.
