How To Gril and Glaze a Duck Breast – BBQ Recipe – Pitmaster X
This duck breast was glazed grilled and served with a orange hony sauce. Its a barbecue recipe thats easy to make, but with a big wow factor.

Recipe (per serving):
– Melt the butter
– add the poultry stock
– add the orange juice
– add the honey and let it reduce to 1/3
– add pepper and salt to taste.
– score the fat and scin on the duck breast
– grill the duck breast
– mop it with the sauce
– let it come to temperature over indirect heat 60 deg Celcius

50 gr butter
200 ml poultry stock
juice of half an orange
2 tablespoons honey
pepper and salt

good recipe. the difference i do is a reverse sear, which i find, is better for mop penetration.

Wouldn't adding acid to your cast iron pan ruin the seasoning of the pan? Sorry, I am a bit new to cast iron pans.

This is perfectly cooked! Anyone who cooks duck breast past med rare should not cook this fantastic bird.
Looks gorgeous! Once you seared it and applied the glaze how long would you leave it off the heat and covered?? BBQ duck this week for me.
Dont get me wrong this recipe looks fantastic and that glaze is just beautiful. However I think the duck breast to be a bit … undercooked…? Unlike beef, I dont think we can go with rare to mid-rare duck or chicken breast? Thats just my honest opinion but can you please reply me back asap? 🙂
