Hey Kent, my wife found a marinade on line to put on fresh pork belly, this was our first try with pork belly ever and made on Super Bowl Sunday. She cut the belly into about 1 inch wide strips and put them on a grillin rack in the oven at about 350 degrees, low and slow with the chicken wings. Half of the belly was done with the marinade and the rest with kosher salt and freshly ground black pepper, this was done the night before and allowed to sit in the fridge, more was applied during cooking, sorry I'm out of order here. Well, we watched that belly crisp up really nice and golden brown, it was a keeper for sure but something you don't want to be eating on a weekly basis…or perhaps you do…

When using bacon for many of my recipes, I use the plain Hickory smoked bacon. This seems to be more of a sweet breakfast bacon. Could I omit the maple syrup and other sweet ingredients prior to marinading to achieve plain smoked bacon? I’m not fond of maple smoked bacon duck bombs. LOL. great video sir.

Just a suggestion; when cooking bacon, start with a cold pan.
Only cure your bacon if it’s ill..!

If you butcher has smoked jowl have him slice as thick as you want. Alot cheaper than bacon and way much better.
