My variation would be to fry the remainder of the batter in the pan like a scrambled egg after the sandwich is done and add that bit of scramble on to top of the sandwich along with the poached egg.

As somebody who converted around a year ago to WF-PB lifestyle, because I'm curious and thought 'will see what happens'. And I'm loving it. So my arteries were sighing about all the 'fattiness'. BUT: since I don't have any medical conditions, I feel like I can (should) have 'A Grilled' once in a blue moon. And here I am, looking for new ideas. I made this a little while ago (before I had seen this video) and did in fact use a sweet batter and topped it with maple syrup. I also did have the egg and used cheddar. Personally, I didn't think it was all that good. I think the flavours clashed way too much (probably the syrup and the cheddar), but that was just my experiment. This savoury version sounds way better!
