I like to mix some grated mozzarella cheese with the hard cheddar for the outside frying stage. Let it the melt around the sandwich on the last flip and slowly lift the sandwich and stretch the cheese mix so it caramelises into a lovely crown of cheese around the sandwich. I call it a crown cheese sandwich ๐ ๐ด๓ ง๓ ข๓ ฅ๓ ฎ๓ ง๓ ฟ
