Question. Do you trim that lair of fat under the top layer of beef?Whenever I do beef ribs it doesn’t render and it remains too fatty. Am I pulling them too early? I do the probe test and make sure it’s like butter

What are your thoughts on the weber smoke fire? Have seen a lot of disappointed you tubers saying too hot on the right hand side and ask Plex near the firepot and plugs up
