This video helped me so much this past weekend. I had a gathering for the Silva-Weidman UFC fight, and I bought 8 skirts to cook on my flattop griddle. I marinated in Mojo Criollo for over 12 hours. Now I was always confused on how to cut it. I learned though this video, and my steak was soooooo tender. Absolutely delicious. Now I made a slight "error" placing the cut steak in a warming pan, and it cooked my pink meat to well done. But it was STILL tender! 🙂 Thank you for this video.

well, i noticed, that the interviewer knows much more than the interviewed. you simply could tell us everything you know and it will be much more useful than the stuff the interviewed tells us. i bett my ' round' on that.

I LOVE THE SKIRT STEAK!!! 100000000 TIMES OVER THE FLANK. Grill the fajitas as we call it in Texas, skirt steak is for those outside of Texas lol. Grill the Fajitas BEFORE you start to cut the meat up for your tacos or burritos. I like to have my fajita slab of meat run throught the tenderizer at the butcher or store two times, same way as a cube steak. That way it is the most TENDER meat you will ever eat. NEVER CUT THE MEAT BEFORE YOU COOK IT!!! It's not the proper method!!!
