  • Chef Tony, great chicken quarter recipe. Would it be possible to substitute mango for the peaches you call for? Also, what property does sugar bring to the brine? I have successfully used brine for turkey, capon and game hens but did not know individual chicken parts or quarters could be brined. Thanks again for a great video. You did "smoke the competition!"

  • Allen, I like the flavor of black pepper, so it helps infuse the brine with some black pepper flavor.
