Grilled Shrimp Quesadilla Recipe With Chipotle Sauce

This quesadilla is great for football game food or anytime! It makes a great lunch or dinner.

In this quesadilla I’m using Monterey jack cheese as the flavors work so well with the chipotle sauce and shrimp.

You can grill the shrimp on the bbq or on an indoor grill pan like I used in the video. Both work fine. Just don’t grill with too high of heat. Keep it medium low to low.

Ingredients per quesadilla:
4 to 5 large shrimp, shelled and deveined
3/4 cup shredded monterey jack cheese
1 tsp. green onion, thinly sliced

butter
flour tortillas (homemade: http://tinyurl.com/l7mlp )

Directions:
Remove the shell and devein the shrimp. Pat dry and then dip into chipotle sauce to coat. Place shrimp on grill pan over medium low heat. Grill 2 1/2 to 3 minutes per side.

Place cooked shrimp on a cutting surface and cut into small chunks.

Place a fry pan over medium low heat. Put a teaspoon or more of butter on the pan and spread to the size of your flour tortilla.

Place a flour tortilla on the butter and add cheese, onion and then shrimp, spreading evenly across the tortilla. Place a second tortilla on top and spread another teaspoon of butter on top.

Cook until the cheese melts and the bottom tortilla gets a nice golden brown. Then flip the quesadilla over and cook until golden brown.

Serve on a plate and cut into serving pieces. Garnish with guacamole: http://tinyurl.com/4ceakko

    Just admit to yourself that this is not your thing.
    The main problem is that you do not fufill your video intentions.. starting with the the misrepresented 'chipotle' shrimp quesodilas subject.

  • I always learn something from your videos. I never thought to use butter on the tortillas, I always used oil. I bet the butter gives a much better flavor and browns it up much better. This looks delish. I hope to give it a try soon!
