Spicy Pineapple Skewers
½ cup pineapple juice
1 tbsp brown sugar
1 tbsp soy sauce or tamari
1 tsp hot sauce
1 clove garlic, minced
1½ cups extra firm tofu, cubed
1 cup pineapple, cubed
1 red onion, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped

In a large bowl whisk pineapple juice, brown sugar, soy sauce, hot sauce and garlic.
Add tofu and coat well. Marinate tofu for at least 30 minutes.
Create skewers by alternating marinated tofu with pineapple, bell peppers and red onion.
Brush each skewer with the remaining marinade and drizzle with olive oil to prevent the skewers from sticking to the grill.
Grill on medium-high heat for 2-3 minutes per side or until veggies have softened and developed grill marks.

  • This is an old macrobiotic recipe. I ate it as fajitas. Made it a few times with lenghtwise vegetables and tofu. Avocado and salsa too. It's sooo amazing.

  • Hi, i am vegetarian and from india. I love to watch your videos because we can see how much effort you put in making videos. I am big foodie and love to cook. I love your vegetarian recipes as they are delicious while other veg recipes out there does not taste good. I know most of the veg indian recipes and i love those but some time i like to try different recipes around the world but it seems it is difficult to make delicious veg recipes and not everyone is able to come up with good recipe except you. Please upload more veg (Eggless) recipe (High priority : Breakfast). Thanks for making such videos and have happy and healthy life ahead.

  • I have been loving these recipes. I was recently diagnosed as pre-diabetic, and your recipes have been so easy to tweak to stay within my carb/cal/sugar and fats counts. I'm looking forward to even more vegetarian recipes from you.

  • I am really loving these vegetarian BBQ recipes. It's always the worst to go to a BBQ and there's no real vegetarian options besides chips and some beans. These recipes have been great for both vegetarians and meat eaters!
