  • Oh, it is like the meat that comes from the lion, not to even be compared to a brisket! Flat Iron steak is the second most tender muscle in the beef second only to the tenderloin!

  • Malcom: what's the weight of the steak? Looks like your cooking the full shoulder without splitting it thin like others do. I love the interior color of this medium rare steak.  Looks nicer than your "Black & Bleu" steak video. Is this because you didn't close the lid on the grill with this one? The black & bleu just didn't seem to be as rich in the finish color.  I know if I over marinade (too long) it sometimes has a tendency to pull the color out of the meat too.  This steak looks amazing. I'm going to try as you show here. Thanks for a great video!

    You could do that to a tennis shoe and have it taste good.

  • Flat Iron steak rocks! I think the Flat Iron is even better than tenderloin/fillet and strip steak, when properly done, because it carries such an outstanding flavor. Short of cap of ribeye, it's my favorite cut. I like using thyme during both the marinating and grilling process, as I find it even further intensifies the flavor. It's hard to believe that it took several centuries for someone to realize how good this cut is…but recently I've seen it more and more in stores, and many of these stores will carry Prime-graded cuts. With where I'm at, a USDA Prime Flat Iron steak costs less than a third of the price of a Prime strip steak so it's a great choice to save some $$$$ but get equal or superior quality.
