That looks divine. I would prefer my Tuna almost raw and red in the center though, but that's a matter of personal taste. The sauce looks to die for.
There's only one way to eat tuna and that is searing it on the outside and leaving it raw in the middle and cut it in quarter inch slices and lay it on a bed of grated cucumber topping it off with a sweet ginger/garlic teriyaki sauce ,garnished with toasted sesame seeds. Pickled ginger and wasabi optional.
Soy sauce is too salty and watery. My sauce clings to the fish.
Horseradish is very different from wasabi.

No. Wasabi is made from the roots of a radish. It is not a mustard. Many people think Wasabi is some sort of mustard, but it's not. The cheap Wasabi you buy are made from mustard seeds with coloring and artificial flavouring added, but real wasabi comes from wasabiroots.
