I tried this and made the mistake of using too small potatoes. I had to do a balancing act to keep the slices from falling into the charcoals.

I made these. They were very good. I used a charcoal grill and it only took 20-25 min. I love the grill in your video.

So the trick is to play bocce ball for a little while until you feel like flipping them over or whatnot?
Try whole potatoes with BBQ sauce on them, real easy, and works great. A medium potato is best, the big ones take too long to cook, or maybe par boil if necessary. Baste the potato with BBQ sauce as desired.
The chef seems like a legit pro, kind of weird that he has that crappy little grill!
