Very good recipe, is delicious and you are right about the the medium finish on skirt steak, rare is tough, medium well is tough, you have to hit that sweet spot. Here is your little joke since you left it out, miso rove you rong time joe, sorry , nam flashback

For some inexplicable reason, skirt-steak and flank-steak are among the most expensive cuts at our local markets. Years ago they were budget cuts. Now they're "luxury cuts" in high demand, hence the premium price.
Doesn't even come close to covering the tenderloin! Are you serious chef John? I was laughing harder at that than anything I've heard in a long time! The opening miso pun I thought was good too, you must of felt like a comedian that day.

Though I agree with your statement, I have to correct you that it's not blood by protein enriched water in the meat.
The flavor in steak is in the blood, if you dont like it, it means you dont like steak. Well done is a dry steak that has no meat flavor, only the spices. And its sad, really sad…. my opinion, if you don't like steak don't eat it…

Well we also like to cook our meat all the way through, but u know there are those who like the juicy, more tender medium rare meats better. It looks too raw to me too but u never know till you try i guess. I've even heard ppl say "dont destroy you meat by overcooking!"
