FDA recommends 165°F min on internal temp on chicken to kill all bacteria especially Salmonella. But it's not recommended to cook at that heat, like you said internal should be 180 or above for the best flavor ?
No skin, no bone, constant turning, and 185. I'm out!

Just grilled thighs for the first time on my charcoal grill. Typically it’s always been drum sticks. But found a pack for $4 and it was a great deal.
I poached my chicken before grilling. I don’t take any chances with uncooked chicken. I keep the skin on while grilling and just toss it out when cutting up the chicken.
“I totally feel how he gets”. Lol
