Cauliflower Grilled Cheese

Here is what you’ll need!

Cauliflower Grilled Cheese
Servings: 2-3

INGREDIENTS
1 cauliflower
Pinch of salt
2 eggs
½ cup vegetarian Parmesan, grated
¼ cup basil, chopped
1 teaspoon garlic powder
1 teaspoon oregano
½ teaspoon red pepper flakes

For the middle
Cheese of your choice
Any additional toppings

PREPARATION
Grate a cauliflower over a large bowl.
Sprinkle a pinch of salt over the grated cauliflower and mix evenly. Leave to sit for 20 minutes.
Pour the cauliflower into a clean kitchen towel and wring the water out.
In a large bowl, combine the cauliflower, and remaining ingredients, stir until well mixed.
Using a spoon transfer two hearty scoops (roughly ¼ cup) of mixture to form each “bread slice” onto a skillet on medium-low heat for about 10 minutes, each side.
Add your cheese and any other toppings, allow a couple minutes for cheese to melt.
Enjoy!

  • wow, lots of haters. I use cooked riced cauliflower to make this with fresh herbs & a slice of low sodium turkey. I love it. It is very easy for a quick, low car meal.

  • The reason for the vegetarian Parmesan cheese is that some cheeses, especially hard cheeses, use animal rennet. To be vegetarian cheese, it needs to use vegetarian rennet or microbial.

  • Excited to make this! I've made a version in the oven, then to the pan. It was delicious, but it was a lot more work. This looks easier, but I would probably omit the herbs first, just to try it more traditional. Also, your video was very short, to the point, and I liked your editing! Cool video! Thank you for this! 🙂

  • People really should try things before they start complaining about something they may never have even tried before. Be open to trying new things. And if this recipe doesn't tickle your fancy because you don't like the flavors CHANGE it play with it and add the spices you like until it works for you. I know this is a different set up than cauliflower rice, but cauliflower rice is awesome and a great substitute for people who don't or can't eat rice anymore. And ok maybe it's a little more work but asst last you know what's in it unlike most of the things they sell in the grocery store all the prepackaged stuff that you can't pronounce a lot of the ingredients and it's not full of preservatives either which means your body will actually know how to process it….. Ooooo what an idea….
