Hi! I’m Harry Soo, a Grand Champion pitmaster from in Diamond Bar, near Los Angeles. Welcome to my vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes, as well as interviews and stories.

On weekdays, I’m an IT nerd living a Dilbertesque existence in a fabric covered cubicle in downtown LA. I’m the head tour guide for a team of IT project managers who build datacenters, networks, servers, and infrastructure that helps bring tap water to 300 cities and 20 million residents in SoCal.

On weekends, I come alive as a pitmaster, competitor, and BBQ instructor. You’ve seen me on BBQ Pitmasters, Food Network, Chopped Grill Masters, Smoked, Cutthroat Kitchen, and local TV in California. My shtick is I’ve used a humble 18-inch Weber Smokey Mountain smoker to win 100+ first places and 1st place USA in the Kansas City BBQ Society (KCBS) awards including best chicken, brisket, and sirloin; and I’ve won over 27 Grand Championships. I’ve personally taught 200+ classes and trained 3,000+ pitmasters in small hands-on dozen student classes in the US, Sydney, London, Kuala Lumpur, Canada, and Hawaii.

I get many questions weekly about how to grill and barbecue. Since I started cooking professionally in 2008, I’ve answered thousands via email so I decided to post my answers via video to reach a wider audience. I’ll do my best to post a video on my channel periodically. I upload vlogs, BBQ product reviews, travel & lifestyle videos, BBQ contests, classes; as well as interviews and stories.

  • If anybody sees this, please know that Harry is a friend of mine. I don't feel attacked and I don't think he's insulting me or attacking anyone's integrity. We've chatted about this and our cooks were very different in temps and duration. Harry isn't sponsored by Weber and even if he was, they wouldn't make him go to a random subscriber's house to shoot a video. Remember this is the same guy whose been giving all his bbq knowledge away for free because you can't take it with you. #bbqlove

  • Holy shnikies! Harry, this will probably be one of your most commented on videos ever! People seem to be so easily swayed by one or two commentators. I get it, I subscribe to you, Maniac, and several other BBQer's. It's only been a couple of days and I've seen a few negative videos. Let me tell you a story, a few years ago, I had the opportunity to buy a Traeger 22 for $300, they retailed for $700 at HD. I had never heard of a pellet grill, didn't know how to use one, had no friends that had one. I researched on YouTube, as we all do. Man, there were quite a few negative reviews. Temps not regulated, crappy metal thickness and quality, spontaneous fires and burnouts. I took what I thought was a gamble and I love it. It turned out that, with proper maintenance, I haven't had any negative issues. My family wants me to cook on it rather than my Weber kettle or propane grill. The only thing missing is the sear on steaks. That's why this new Weber intrigues me. I have been doing the reverse sear, where I cook the steaks slow on the Traeger and while that is happening, I have a chimney with charcoal ready and a grate on top to sear them when they are done. Very effective, but time consuming. This new Weber could be the best of both worlds. If there are issues, Weber will fix them. I won't be an early adopter on this one just yet though. I'll keep smokin' with what I've got.

  • Grease fire issue and shallow lean on pellet hopper seems to be it. Now that's a couple of major flaws but let's not panic , it just needs to be rectified asap which as I see will need modifications by Weber. Imo it's got moving parts and that'll always cause an issue and that's why I'll never go pellet grills. After Justins vlog I'd never trust this to cook a 20 hour brisket ever.

  • Please do a low and slow cook on a brisket and pork butt when you get your unit in the mail (I imagine you would with me asking, lol). Most people aren't going to do a hot and fast on those cuts.

  • Harry, Thanks for the video. I believe that you and Dennis did put the cooker through it's paces, and judging from what we saw it is a solid performer. Are there some issues with the Smoke Fire that need to be worked out, Yes, but what new product doesn't. It was engineered to a price point to compete in the market space, rather than be the holy grail of pellet cookers. My take on the grease fire issue is that channeling hot cooking grease towards the fire pot rather than away from it, was probably not a smart decision, and it goes counter to the efforts that Weber makes to minimize flair ups in their gas grill models. Given all of the negative social media exposure of late, I assume that Weber will correct the issues eventually. Also, Dennis if you are reading the video comments like most of us do, we are all jealous that you received a private BBQ Masters course from Harry Soo for the tuition price of a Weber Smoke Fire, and got to keep the cooker when it was all said and done. Sounds like a sweet deal to me!!!

  • I dont see why u would say some ppl are naysayers when their actual video's of the issues they are having. I'm glad one smoke fire is working good, but when theirs actual videos u can't say they are naysayers.. Baby back maniac had a fire in his grill!! Love weber but they missed on this one…

  • Im glad he's liking his but these grill suck for 1200 dollars. They look terrible after just a little bit of use. The hopper is horrible and isnt that really important? I by know means would trust this being left alone. Good Luck I'll spend over a grand on something that works 100% like it should

  • After reading some of the comments, I feel like there’s too much hate on Harry. A good cook can cook on anything. If you don’t like the product then say so. But don’t hate on the cook that knows what they’re doing. I won’t be buying any pellet cooker in any future. I rather spend my money on Summit Charcoal which I will.
